Sotovelo is an innovative white wine made from the Palomino grape variety, crafted within the Jerez region.
All our grapes come from the emblematic vineyards of Balbaína, located between Jerez, El Puerto de Santa María, and Sanlúcar de Barrameda, on the Atlantic coast of southern Spain. In the vineyard, Thomas de Wangen works with respect for the soils to convey the purity of the Albariza (calcareous soil), always following organic practices.
In the winery, Raúl Moreno intervenes minimally and follows the traditional process used for making Fino or Manzanilla. We age our wine for 8 months under a “velo de flor” (a thin layer of yeast) in chestnut barrels. This process imparts notes of almond and toasted bread, alongside saline and mineral nuances, combined with the freshness of citrus, green apple, and nectarine, characteristic of the Palomino variety.
