Factor XPTO: The simplicity of the complex.
Ethos wines are produced at Quinta de São Lourenço, located in the magnificent Mondego Valley, within the Serra da Estrela Natural Park. The 12 hectares of vineyards at 500 meters of altitude and over 60 years old were planted on terraces supported by granite walls, with a predominance of indigenous Beira Interior grape varieties, such as Rufete, Baga, Jaen, Siria, Fonte Cale and Malvasia Fina. Tiago Mendonça, born in this land, started viticulture in 2018, after several years of producing one of the best olive oils in the world, on his ancestors’ property. He began by recovering the hectares of vineyards he acquired with the Quinta, starting the organic production method where he placed special emphasis on minimal soil mobilization and the absence of herbicides. He deepened his taste for enology, with the aim of producing wines with minimal intervention, using indigenous yeasts and low sulphite content. In this way, Ethos wines aim to respect the nature and origin of our grapes, bringing their potential to the identity and character of Serra da Estrela.
